Slow Cook Onion Chutney

Ingredients

  • 6 large red onions - sliced
  • 1 red chilli pepper - seeded and diced
  • 2 TABsp olive oil
  • 1 cup soft brown sugar
  • 1/2 cup red wine vinegar
  • 2/3 cup balsamic vinegar
  • salt, pepper

Instructions

  • Combine the red onions, chilli, olive oil, sugar, and vinegars into your slow cooker
  • Put the lid on and cook on LOW for 8 and 1/2 hours until thick and jammy, stirring from time to time
  • Season to taste with salt and pepper before leaving to cool
  • Spoon into sterilised jars
