I love my Slow Cooker. Who would have thought I could make chutney in it too?
Slow Cook Onion Chutney
Ingredients
- 6 large red onions - sliced
- 1 red chilli pepper - seeded and diced
- 2 TABsp olive oil
- 1 cup soft brown sugar
- 1/2 cup red wine vinegar
- 2/3 cup balsamic vinegar
- salt, pepper
Instructions
- Combine the red onions, chilli, olive oil, sugar, and vinegars into your slow cooker
- Put the lid on and cook on LOW for 8 and 1/2 hours until thick and jammy, stirring from time to time
- Season to taste with salt and pepper before leaving to cool
- Spoon into sterilised jars
